Ingredients:
3 c chopped or grated zucchini
1/2 c chopped onion
1/2 c shredded cheese (cheddar, mozzarella, or other.)
1/2 c grated parmesan cheese
1/2 c Gluten free baking mix (King Arthur)
4 eggs, slightly beaten
1 tsp salt
1/2 tsp pepper
½ tsp oregano
1/2 tsp basil
1 tsp garlic powder
1/2 c olive oil
Instructions:
1 Mix baking mix, zucchini, oil, eggs, onion, parmesan cheese, cheddar cheese, salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
2 Pour into a greased pie plate.
3 Bake at 350 degrees for 40 minutes. Freezes well, defrost at low power in microwave.
